SUGAR FREE BISCOTTI

The Ingredients:
1 cup of Agave Nectar
 
3 eggs
 
2 and 1/2 tablespoons of melted butter/margarine
 
1 tablespoon of orange zest
 
1 tablespoon of vanilla
 
1 tablespoon of almond extract
 
2 and 1/4 cups of flour
 
1 teaspoon of baking soda (Bi-carb)
 
1 cup of chopped walnuts
 
1/2 a cup of coconut
 
1/2 a cup of chopped dates
 

Instructions:
 
1. Preheat oven to 350F.
 
2. Beat eggs and Agave Nectar in a large mixing bowl until thick.
 
3. Whisk in butter, zest, vanilla and almond extract and mix. Sift in the flour and baking soda. Add chopped dates, walnuts, and coconut and mix thoroughly.
 
4. Split the dough in half and shape 2 loaves, 10x4 inches.
 
5. Bake each loaf for 20 minutes. Remove them from the oven and slice into 1/2 inch slices, using a serrated knife.
 
6. Place biscotti slices back in the oven and bake for another 5 minutes on each side.
 
7. Let them cool and eat your biscotti!
