INGREDIENTS

240g Lean Mince

100g Onion, chopped

1/2tsp Oreganum

1/2tsp Salt

Black Pepper

6 Zucchini, sliced lengthwise

100ml fat free Yoghurt

1 egg

40g low fat cream Cottage Cheese

1/2tsp Salt

Black Pepper

Nutmeg

20g Mozarella Cheese

 

METHOD

Brown mince & saute onion. Sprinkle in oreganum, salt and pepper.

Spray a shallow ovenproof dish with cooking spray. Beat together the yoghurt, egg, cottage cheese, salt, pepper and nutmeg.

Layer alternately the zucchini, mince and dairy mix. End with dairy mix. Sprinkle with cheese and bake at 180 deg C for approx 30 minutes or until zucchini is tender.
