INGREDIENTS

20ml Gelatine

125ml Water or liquid from tinned fish

350g low fat Cottage Cheese

150g flakes Tuna, Shrimps or Crab

150ml plain Yoghurt

5ml Lemon Juice

25ml chopped Chives

a few drops of Colouring (red & yellow to give a seafood colour)

 

METHOD

Add gelatine to water to form a sponge. Dissolve over hot water.

Combine cottage cheese, fish, yoghurt, lemon juice, chives & colour (if using).

Add gelatine and chill in wetted individual moulds or one large wetted mould (fill mould with water, empty and leave wet).

Turn out onto a bed of lettuce leaves and garnish with lemon, cucumber & prawns
