INGREDIENTS

260g Chicken Breasts, skinned

1 Onion, chopped

250ml Stock

1tsp Lemon Juice

1tsp Soy Sauce

1/2tsp Garlic Salt

1/2tsp Herb mixture for chicken

1/2tsp Thyme

1/2tsp Salt

Black Pepper

2 Potatoes, cut into large cubes

125g frozen Broccoli, thawed

1/2 Cucumber, cubed

1 Green Capsicum, cut into strips

200g Mushrooms, sliced

2 large Tomatoes, skinned and chopped

200g frozen Mixed Vegetables

2 Gem Squash, halved

1/2tsp Herb mixture for vegetables

 

METHOD

Brown the chicken and saute the onion.

Add to slow cooker. Add stock and all seasoning. Then add the vegetables in the order given and sprinkle with herb mixture for vegetables. Do not stir.

Cover and cook on low for 6-8 hours.

Toss together all the ingredients and serve
