INGREDIENTS

4 Chicken Thighs, skinned

100g Onion, chopped

200ml Natural Yoghurt

3/4tsp Ground Ginger

3/4tsp Paprika

2 tsp Curry Powder

25ml Lemon Juice

Finely grated rind of 1/2 Lemon

1tsp Salt

Black Pepper

1 clove Garlic, crushed

 

METHOD

Prick chickien well and place in a shallow baking dish. Combine remaining ingredients and spoon over chicken. Cover and refrigerate for 24 hours

Place on rack in roasting pan and bake at 150 deg C for 1 1/2 hours, basting occasionally with the marinade.

Serve with green salad
