INGREDIENTS

1 Egg, separated

6tsp Sweetener (spoon for spoon type)

25ml Milk

2ml (1/2tsp) Vanilla

1ml (1/4tsp) Cream of Tartar

1ml (1/4tsp) Salt

 

METHOD

Beat the egg yolks and 4tsp sweetener until pale and thick. Whisk in the milk and vanilla. Spray an individual baking dish with cooking spray. Pour in custard mixture

Beat egg white, cream of tartar and salt until stiff, but not dry. Add remaining sweetener and blend a little longer.

Pile meringue onto custard and bake at 180 dec G for 30 minutes, or until pudding is set and meringue is golden brown.
