INGREDIENTS

4pkts Unflavoured Gelatin

1 cup Cold Water, divided in two

2tsp Vanilla Extract

1/2 Cup Sugar or Sweetener (spoon for spoon type)

3 Egg Whites

 

METHOD

Put 1/2 cup water in a pie pan & sprinkle gelatin evenly over the water. Stand for 5 minutes to soften.

Bring the other 1/2 cup water to boil in a small pot. Remove from stove and add gelatin mixture. Stir until gelatin completely dissolved.

Stir in vanilla and sugar/sweetener.

Chill until mix no longer warm to touch, but not thickened at all. About 15 minutes, stirring every 5 minutes.  Remove from fridge

Meanwhile, beat egg whites until soft & fluffy, but still airy.

Slowly add gelatin in a thin stream while beating. Beat on high spead until mix is light & fluffy and looks like marshmallow creme. It should about double in volume.

Immediately spread in a shallow pan. This must be done quickly before the gelatin sets.

Chill until set.

Cut and store in fridge.

 

NOTE

If it has a strong gelatin flavour, it should go away as it ages.
